Teresa has over 25 years in the industry and spent 17 years at the Italian bistro Basil’s, where she learned to cook. Several months after opening Aquarelle, he was forced to return to his native France due to visa issues. He was able to return in 2007. Jacques has over 25 years in the industry. He began his apprenticeship at the restaurant La Peniche in the Loire Valley. Since that time he has worked in a range of Gastronomique restaurants in the Loire Valley, Lyon and Provence. He met Teresa while working L’aix-Quis where he was the head chef.

Bess is an authentic bistro in the Stratford Arms building at 500 West Sixth Street, Austin’s Old Pecan Street. Originally the Stratford Apartments built in 1918, the vintage building’s old bank vault is Bess’ kitchen, a treasury of great food, today. Austinite Jack Fennell first discovered pies while living in Sydney, Australia. An Australian icon, these handheld, flaky pastries are filled with delicious meats and vegetables. Jack decided to bring a taste of Australia back to America and opened Boomerang’s Pies in 2006. Lance McInnes made a similar discovery of the Aussie pie while visiting Mooloolaba, near Brisbane. Back in the States, Lance came across Boomerang’s. Jack and Lance quickly recognized a shared vision and partnered to offer Boomerang’s pies throughout America.

Children of the Kettle Corn (COTKC) was founded in 2002, by owner Catrina Allan, out of Austin Texas. Chef Garret Bjorkman, the Guru of Hollywood Movie Productions and Managing Director; Christopher Happley entered the Austin City Limits Music Festival Vending Circuit in 2003, and has been running strong through the Music Festival Circuit, predominantly Texas ever since. The product is just as the name describes, adding a bit of humor from the play on words, which has received 9 years of hysterical feedback and write-ups.
The business operates out of three kettles; including a 240 QRT fabricated COTKC design, which is the largest kettle available on the market today. We call this rare piece of equipment, “THE BEAST,” which is every Quart worth of its name. Our Kettle Corn is Organic, Vegan and Gluten Free, a lighter snack that stays around all day and can be shared amongst the entire group! Freebirds World Burrito
It all started in ’87 near the beach in Santa Barbara, California when two ex-hippies figured out how to roll some awesome burritos using fresh-chopped veggies, house-made rice and beans, and of course grass fed beef and all natural chicken. Students at UC Santa Barbara quickly adopted FREEBIRDS as their own. Lonesome Dove Western Bistro
Fort Worth, Texas chef Tim Love is known as much for his freewheeling personality as his signature urban western cuisine. As chef and owner of The Lonesome Dove Western Bistro and The Love Shack, he’s as comfortable cooking for the Dallas Cowboys as he is for his own kids, and his inspired and innovative dishes have earned critical and popular acclaim. In 2000, Love opened The Lonesome Dove in the historic Fort Worth Stockyards district, earning his reputation as a veritable meat master for his preparations of everything from steaks to rabbit, wild boar, kangaroo, elk, and even rattlesnake. In 2007, Love opened a classic burger joint called The Love Shack, also in the Stockyards, and it was another instant hit, earning three stars from The Dallas Morning News, and was singled out as having the “most perfect burger on the planet” by The Fort Worth Star-Telegram. Love’s second Love Shack location opened in 2009, and in April 2011 he opened a third location, this time in his hometown of Denton, Texas.
Through his restaurants and work in the community for such causes as Burgers 4 Babies in support of Fort Worth’s NICU Helping Hands Foundation or Spoons Across America, Love has become the de facto culinary ambassador for the state of Texas, always doing his fans and family proud. His charm and southern hospitality are always on display, whether it’s at his restaurants or at culinary events and cultural festivals around the world such as the Food & Wine Classic in Aspen, the South Beach Wine & Food Festival, and as the official chef of Austin City Limits. Love is a regular guest on the CBS Early Show, and has appeared on countless other television shows, including Top Chef Masters, Iron Chef America, The Today Show, Paula Deen, and the Food Network, where he was a judge on the popular series “Best in Smoke”.

Bryce grew up in Austin, first gaining restaurant experience in his father Jack’s kitchen of Z’ Tejas Grill.
After working at the Austin favorite for a few years through high school, Bryce got his culinary degree from the California Culinary Academy in San Francisco. After school he gained more experience in kitchens around Austin like Wink and Moonshine. With 2 years of working at Café 909 in Marble Falls as the sous chef, Bryce decided to go back to San Francisco and refine his cooking skills at Boulevard. A stint in Aspen at the reputable Montagna at the Little Nell, provided Bryce with more knowledge to fuel his passion for using local sustainable ingredients. With “Farm to Table” experience at multiple restaurants around the country, Bryce decided to take that concept to a different venue back home in Austin.

The Salt Lick
Executive Chef George Jacquez is originally from sunny California. George learned his trade from his parents who were both chefs. His father was executive chef for the Roosevelt Hotel in Hollywood and his mother was a chef at the convention center (now the Staple Center). “I learned from the school of hard knocks”, Jacquez says. “Getting the opportunity to be in the kitchen, the experience was all there”. His first paying kitchen job was for the Travel Lodge in downtown San Antonio working the egg station at 15 years old. His experience eventually landed him the position of Corporate Chef for the Cheesecake Factory where he stayed for 17 years before moving to Las Vegas to help open Mandalay Bay. He went on to open the popular Tao nightclub before becoming executive chef at the Round Rock Casino Resort and Spa where he oversaw 9 restaurants.
It is at the Red Rock Casino where George met the owner of The Salt Lick, Scott Roberts when the Salt Lick opened a restaurant inside the casino. George knew that if her ever left Las Vegas, Scott is who he would want to work with. Having roots in San Antonio, Chef George moved his family to Austin in March and is now the Executive Chef and Director of Catering/Special Events for The Salt Lick.

Stubb’s BBQ
In 1995, C.B. Stubblefield founded Stubb’s BBQ Restaurant at the current location, 801 Red River in Austin, Texas. The historic building dates backt to the 1850’s when it was built by Mexican Stone Mason’s. The building was once home to the “One Night” club, where many (now famous) musicians got their start. After 2 years of hard work preparing the restaurant the doors were opened and Stubb’s BBQ hosted its very first musical act. From then until today Stubb’s BBQ Restaurant and Waller Creek Amphitheater has become nationally recognized for its food and music. The restaurant and music venue are now Austin landmarks.

The Mighty Cone
The story of the cone begins with a simple, yet delicious breading developed for fish by the late Hudson’s on the Bend sous chef, Courtney Swenson. Hot ‘n’ Crunchy Trout became a mainstay of the famous Lake Travis restaurant, for year’s holding top honors as one of the most ordered entrees. In 2002, the Austin City Limit Music Festival contacted Hudson’s owner Chef Jeff Blank to help them spearhead their efforts to entice local restaurants to join the festival’s food court. Their goal was to create festival food that would emulate the unique heritage of Austin cuisine. Blank began to experiment with the famous Hot ‘n’ Crunchy breading on a variety of foods. Chicken proved to be a good, festival-friendly candidate–delicious, popular and relatively inexpensive (especially compared to the more typical Hudson’s fare of pheasant or trout). He wrapped the chicken in a tortilla and popped it into a paper drink cone (to make it easier for festival-goers to eat and walk to the next stage), topped it with a mango-jalapeno slaw and ancho sauce and Voila! the Hot ‘n’ Crunchy Chicken Cone was born.
Cone sales at ACL Festival went through the roof, and the chef eventually expanded his Hot ‘n’ Crunchy repertoire to include avocado and shrimp. As the cones’ iconic status at ACL Festival continued to expand, Blank began toying with the idea of making the cones available year-round, and in March 2009, launched the opening of The Mighty Cone on South Congress Avenue in downtown Austin.

The Best Wurst
Often touted as “the most efficient kitchen in Austin”, The Best Wurst has been a staple fixture of Austin’s 6th Street since the early 90’s. Voted Best Street Food in the Austin Chronicles Readers Pole two years running, The Best Wurst also lays claim to being perhaps the oldest mobile vender in Austin. In fact, the only vender to precede Best Wurst was Jonny Johnson with his Hot Dog Carts, a colorful character that bragged of his place in the Federal Witness Protection Program. Best Wurst owner Jon Notarthomas has been cited as the original trail blazer in the burgeoning mobile food vending scene, and no one’s visit to the party district is complete until they’ve stopped at The Best Wurst. This stand at 6th and San Jacinto is a genuine Austin Institution and has been recognized by the Food Networks Guy Fieri, Rachel Ray, and has been featured on the Tonight Show, MTV and National Public Radio. Most recently, The Best Wurst been featured in Heather Shouse’s book, Food Trucks; Dispatches and Recipes from the Best Kitchens on Wheels.
Serving nearly 80,000 grilled Sausage Sandwiches annually; this 4 x 5 foot street cart is expected to pass the million sandwich mark this coming year. And while New York hails “Ray’s”, LA boasts “Pinks” and New Orleans beckons “Lucky Dogs”, Austin screams “The Best Wurst!” Simple and straightforward, these sausage sandwiches are grilled to perfection and served with hand cut caramelized grilled onions, hot sauerkraut, and served with Best Wurst’s own Brown Mustard and Curry Ketchup.

Torchy’s Tacos
Who says you need a business plan to start a taco joint? With a head full of ideas and a slight ache from partying throughout the summer, Michael Rypka left his fancy executive chef job to chase his dreams. He soon found them in Austin with a newly-acquired food trailer and a red Vespa scooter. Houses were mortgaged. Credit cards were maxed out. A partner by the name of Bill was convinced to join Michael’s passion for food. Torchy’s Tacos opened on Bouldin Creek at South 1st.
Today they operate several stores and a trailer park. They’ve won a bunch of cool awards and had write-ups and videos spread across the nation. You can still find that passion in the food at any of Torchy’s hideouts. You’re likely to catch Rypka back in the kitchen in his chef pants, Bob stopping by your table to say “hi,” Jay helping out the managers do their “manager-y stuff” and Farrell working to bring a location nearer to you.
